Chef Naomi’s scrumptious Peach Fool is the perfect thing to make with all the organic peaches abounding right now. Make it yourself or try it at the Wholefoods Kitchen.
12 fresh peaches
1/2 cup of water
2 tbsp caster sugar
300ml double cream
200g natural yoghurt
285ml condensed milk
1 lemon, juiced
Cut 10 of the peaches into pieces and place in a pot with the sugar and water.
Bring to the boil, then simmer for 10-15 minutes, until peaches are soft.
Once cooled, blend to a purée. Set aside.
Whisk cream till it forms soft peaks, then combine with yoghurt, condensed milk and lemon juice.
Layer the cream mixture and the peach purée in glasses and top with slices of fresh peaches to serve.
