AUTUMN ‘PINK’ SOUP WITH ROASTED ONIONS & BROCCOLI

Autumn.

This season truly is a sight for sore eyes. A warm, enticing colour canvas depicts all that is Autumn in nature and in food. Cooler mornings welcome Loving Earth Raw Hot Chocolates, (our favourite) and gloves on your early bird walk. The puffer vest makes its comeback with morale. Evenings allow us to begin consider comforting slow cooked dishes with warming spices.

We love everything about this season, and SBS have provided us with a gorgeous seasonal recipe to ease into the season and nourish the soul.

Whilst the flavour of broccoli can be quite distinct to put into soup, the creaminess of the avocado and sweetness of the coconut milk makes this particular heart warmer a balanced one. The garlic roasted onion and beetroot add a hint of smokiness and depth to the soup, and essentially – it’s PINK! Like, come on! The image alone sold me. To see the seasonal produce make up this very soup is just the rocket on the top.
